Their History
Mathis Devaux grew up in the back kitchens of the restaurants run by his grandmother, mother and uncles. Every cell of his being is infused with fragrant juices and subtle flavors . The young chef could have been content to work for his family, to make this culinary heritage flourish. He chose to free himself from it. To be alone at the helm of an establishment that resembles him, that can reflect his soul and be the sum of his passions.
As a child , he absorbed this knowledge by capillarity. As a young man, he worked hard for the most beautiful houses, with the most beautiful products. Maison Devaux is the fruit of long reflection, a desire to be, more than a restaurant, an experience where all the senses are solicited.
There is a part of childhood there, with the family as a pillar, with the Landes as a refuge, this region where his father took him on vacation and where, with his stepmother, they acquired this estate which seemed made for him.
